Siberian pelmeni dumplings

We all connect over our shared love of boiled dough stuffed with a filling of sorts, which is what makes dumplings so universal. And while there are many types of dumplings native to different parts of the former Soviet Union, Siberia’s claim to fame is the Siberian pelmeni.

Pelmeni are tiny round dumplings stuffed with a blend of pork and beef. They’re either consumed with a generous chunk of butter and a dollop of sour cream, or — and this is my family’s favorite — in their own richly flavored cooking broth with plenty of black pepper. No matter how you serve them, they’re always made in big batches, and when cooked from frozen they’re ready in just 10 minutes.

In this class we will learn how to make the dough, 2 different fillings (spiced lamb and wild mushroom), how to shape and the different ways to serve these dumplings. A zoom link along with a shopping and ingredients list will be sent to you 48-hours before the class

Russian pirozhki buns class

Pirozhki is a word pretty much synonymous with the word babushka. I would struggle to find any Russian kid who didn’t go to visit their grandma for a meal of freshly baked or fried stuffed buns and tea. While the tradition of eating pirozhki out of your granny’s loving hands is firmly ingrained in Russian popular culture, these hot buns stuffed with all sorts of fillings were also a widespread street food in the Soviet days. And guess what, the vendor would more often than not be a babushka.

So let’s return to the warm and most importantly safe environment of our babushka’s kitchen to enjoy the pillowy, squeaky dough filled with such delightful ingredients as mushrooms, sauerkraut, cabbage and boiled eggs, or minced meat and onions. In this class we will learn how to make the light leavened dough from my granny’s original recipe, as well as 3 filings!

A zoom link, along with a shopping list and ingredient list will be send 48-hours ahead of the class.
