A festive sauerkraut 2024!
This will be a real star on your festive table and a must-have ingredient in the Boxing Day sandwiches!
2 small red cabbages or one medium
2 medium beetroots
1 apple
1 orange
150-200g cranberries
A large bunch of dill
2 tbsp of fine sea salt
1 tbsp of fine sugar
1 sterilised jar
Method
Finely shred the cabbage, and place in a bowl.
julienne or grate the beetroot
Finely slice the apple
Zest and segment the orange
Cut the cranberries in half
Finely chop the dill
Place everything into a large bowl, add salt and sugar, and give it a thorough but gentle massage, for about 5-8 mins.
Place into a jar, pounding firmly each layer.
Weight down with a water filled freezer bag.
Keep for 10-14 days at room temp out of direct sun light!
